Scrambled Egg With Cauliflower & Crispy Coconut:

Cauliflower is my favorite veggie stuff!! I love trying new dishes with it.. So yesterday for supper I prepared a simple yummy dish ..

Scrambled egg with cauliflower & Crispy Coconut😋!! This is the second time I am posting a Scrambled Egg recipe..my first one was with sausage & bell pepper !!

so here’s the quick recipe :

Ingredients:

cauliflower-1/2 of big 1( or as per needed)

Coconut-1/4 ( grated )

green chillies-3( chopped )

sweet corn-2 spoon

Egg-3

red chilly powder-1 teaspoon

Turmeric powder-1 teaspoon

pepper powder-1 spoon

cilantro & mint leaves-a small bunch( chopped )

Olive oil-3 spoon

How to make:

1)heat a pan.. Add half the oil and then cook the green chillies in it.. Now add grated coconut to this and saute for 5 mins..

here comes the yummy smell of coconut & chillies😛..( wowwwww…)

2)now add the cauliflower and salt.. Cook for 8-10 mins with the lid closed!! Stir occasionally..

3)now add chilly powder and turmeric powder to this.. Cook well till the cauliflower becomes tender..

4)now add the sweet corn and mix well..

5)later keep the veggies to the side of the pan and make some space to prepare the egg..

6)add some rest of the oil to this portion and add egg mixed with pepper & salt..scramble it well and mix with the veggies..add the leaves and saute well..

  2. I am going to make this for my Sunday morning breakfast. Just picked my first cauliflower from the garden and have corn already cooked, so I am half done. Thanks for a great brunch.
